On a roadtrip through Hatch, New Mexico we were able to visit Grajeda Farms in the outskirts of the town and purchase 160lbs of Sandia Hatch Peppers. We roasted and smoked these to perfection and have blended these medium spiced, earthy and buttery peppers into a basic chile sauce that lets these beautiful peppers shine through, an amazing enhancement to Tex-Mex cuisine.
